Foodie Friday: Easy Energy Bars

We want you to join us at the Baby Show this weekend, but we know you need snacks! Shopping and navigating busy crowds can be hard work. Bring along these quick and easy energy bars. They are fast to make and delicious! They are great to take when shopping, in your hospital snack bag, or to eat one handed while feeding your baby.

Homemade Cherry Pie Energy Bars

 

Ingredients

1 1/2 cups raw almonds
1 1/2 cups dried cherries
8-10 medjool dates (pits removed)
water if needed
Instructions

In a food processor, combine all 3 ingredients.
Slowly, a little at a time, add water until you see the mixture clump together.
Line an 8×8 glass baking dish with parchment paper. Make sure you leave enough room for some paper to stick out the sides.
Press the mixture into the baking dish.
Stick in the fridge to firm up.
Once firm, use a pizza cutter to cut into bars.
Keep these bars stored in the fridge. They should last several weeks. Enjoy!
